it's far and long way, going by daytime train will be time consuming. It can be scenic, but if you are going on main line - the scenic place on OeBB section - the Arlberg pass - is very far on West - between Landeck-Zams and Bludenz - for example if start from Vienna by slower overnight train (especially in the case if you'll choose not the faster Zuerich-bound, but the slower domestic, Bregenz-bound) - Arlberg pass will be next morning (but check the daylight hours depending on date of your travel, even the latter ).

More interesting sections on Eastern part of way by Austria are not on main line, they require detour, which will need you'll need more time.

Logical way Vienna - Feldkirch - Buchs SG - Zuierch - Bern - (Lansanne or Visp) - Martigny - Chamonix

Possible interesting detours for more scenic views:

1. overcoming section Salzburg - Innsbruck via Zell am See (instead via Germany via bypass of Rosenheim non-stop, it's so called DB-Korridor, it's the way how all long-distance trains go). Unfortunately it's time consuming and increase travel time for 2 hours.

2. a lot of possible options of detours on Swiss part. Anyway most probable you'll buy Spartageskarte for 52 CHF (pass for all day for all railways of Switzerland, need to be purchased in advance, limited quiantity is available 52 CHF is minimal possible price), so you can go as you wish. Hypothetically you can go even by Glacier Express (which means +23 CHF for seat reservation in panoramic car or you can go same way by usual train with usual windows, in this case additional payment is needed supplement). Spartageskarte will cover your way from Buchs to Le Châtelard-Frontière by rails.

Goging via Glacier Express (instead via Zuerich) will require 2 hours more (i.e. you'll need to go ~8 hours on section between Sargans to Chamonix instead of ~6 hours via Zuerich).
But I already written in other topic - I don't find travel by Glacier Express the perfect idea because it's too much at once, as for my taste. May be with stopover in Andermatt - to walk to famouse devil bridges - will make it making more sence.

Maxy, these advices are highly appreciated, thank you very much indeed. I'll dig into it. Maybe a combination of a slow overnight and some mountainous railway and walk in the afternoon, as you say.

on other hand there is other way - slightly slower - but only 3 changes after Vienna.
It's the way via Italy:  Overnight train Vienna - Milan then n Milan - Turin local Turin - Aosta and then bus from Aosta to Chamonix. Section by bus is only ~1,5 hours
In case of equal price to overnight trains - this way is cheaper (Italian trains are inexpensive, bus - too), but often first-minute tickets for Vienna for overnight trains sold-out to Milan-bound group of cars quicker, especially in high class, while typically the longest remain available lower price is usually observed in Bregenz-bound cars.

Please note, in this case you travel by bus under Mont Blanc, but via basis tunnel (i.e. you won't see anything).

Alternative of basis tunnel  is overcoming over from Italy to France via Agille du Midi (elevation 3842 m) is possibl

it's extremely interesting, but possible only in summer. Also it's pricey.

DB also has http://persoenlicherfahrplan.bahn.de/bin/pf/query-p2w.exe/d
where you can put limits to the number of changes.

Well, with a limitation to 4 changes between Ukraine and Chamonix,
no results, which is strange as it finds Wien Hbf to Chamonix with
3 changes (Zürich HB, Genève, St. Gervais). Will work better
if no strike in France.

There is an overnight service Vienna to Zürich.
